Sweet & Spicy Jerked Snack Mix

With the Superbowl right around the corner I am busy piling up recipes! A great resource is always the fun blog “Two Sisters and a Meal” from my dear friends, and the amazingly talented sister chefs, Michelle and Suzanne Rousseau.

Here’s their awesome take on snack mix with some fresh ginger and jerk seasoning to get any party started!

Sweet & Spicy Jerked Snack Mix

Ingredients

1 cup sugar
¼ cup water
1 teaspoon sea salt
¼ teaspoon freshly grated ginger
2 tablespoons wet jerk seasoning
1  cup unsalted roasted cashews
½ cup unsalted roasted almonds
½ to 1 cup mini pretzels / pretzel sticks or popcorn
½ cup unsalted roasted peanuts or shelled pistachios

To Do

1 Spread a baking sheet with parchment paper that is brushed with a little vegetable oil.

2 Bring sugar, water, ginger and half of salt to a simmer in a saucepan over high heat, stirring continuously until sugar has dissolved. Allow to simmer until sugar is caramelized and a golden colour (this should take about 4 to 5 minutes). Carefully stir or whisk in the jerk seasoning and mix till combined. Cook for about another 45 seconds.

3 Remove pan from heat. Throw in cashews, almonds, pretzels and peanuts, stirring to ensure they are coated with the spiced sugar. Immediately pour the mix onto the baking sheet lined with parchment paper and spread it out in a thin layer. Sprinkle with the remaining salt and allow to cool completely. When ready break into bite sized pieces or rough chop with a knife. This should make about 4 cups.
