Ingredients1 bag or bunch of spinach 1 red onion sliced 3 tablespoons aged balsamic vinegar 1 teaspoon Dijon mustard 1 garlic clove, peeled and crushed through a garlic press 3/4-cup extra-virgin olive oil Salt and freshly ground pepper, to taste 1 package of peppered goat cheese, crumbled
Directions: Mix together balsamic vinegar, mustard, and garlic. Slowly stir in olive oil. Add salt and pepper to taste. Serve over spinach and garnish with sliced onions and crumbled goat cheese. Swap spinach with field greens in you’re looking for an even lighter flavor.
